Bacon Pancakes
You’re about to enter breakfast bliss territory! This recipe brings crispy bacon and fluffy pancakes together in one pan-fried bite—just imagine a bacon pancake stick you can dip in syrup. Here’s how to make these pancake-battered bacon strips in a snap.
Ingredients
- 8 slices of bacon
- 1 cup pancake mix (your favorite brand or homemade mix)
- 3/4 cup milk (adjust for desired batter thickness)
- 1 large egg
- 1/2 tsp vanilla extract (optional for a hint of sweetness)
- Butter or oil, for frying
- Maple syrup, for serving
Instructions
- Cook the Bacon: Preheat a nonstick skillet over medium heat. Fry the bacon until it’s partially cooked and slightly crispy, about 2–3 minutes per side (it will cook more when it’s in the pancake batter). Remove bacon and set on paper towels to cool slightly.
- Prepare the Pancake Batter: In a medium bowl, whisk together the pancake mix, milk, egg, and vanilla extract until smooth. The batter should be thick enough to coat the bacon but still pourable—add more milk if it’s too thick.
- Dip the Bacon: Pat the bacon dry, then dip each slice into the pancake batter, letting any excess drip off.
- Fry the Bacon Pancakes: Heat a bit of butter or oil in the skillet over medium heat. Place each battered bacon strip in the skillet, cooking for 2–3 minutes per side, until golden brown and puffy. Transfer to a plate and keep warm.
- Serve: Serve your pancake-battered bacon strips with a side of warm maple syrup for dipping.
