Crispy Oven Baked Potato Skins

Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 16–20 mini pepperoni slices
  • ½ cup sour cream
  • 2 tablespoons chopped green onions (for garnish)
  • Crispy Baked Potato Skins

Instructions

  1. Prepare the Potatoes:
    • Scrub the potatoes clean and pierce them several times with a fork.
    • Microwave for 8–10 minutes, flipping halfway, until softened but not fully cooked. Let them cool until easy to handle.
  2. Scoop Out the Potatoes:
    • Slice each potato in half lengthwise and scoop out most of the flesh, leaving a sturdy shell with about ¼-inch of potato.
    • Reserve the scooped potato for another recipe, like mashed potatoes.
  3. Season the Skins:
    • Preheat your air fryer to 400°F (200°C).
    • Brush the potato skins inside and out with olive oil. Sprinkle evenly with garlic powder, smoked paprika, salt, and black pepper.
  4. Air-Fry the Potato Skins:
    • Place the potato skins cut-side down in the air fryer basket.
    • Air fry for 8 minutes, flip them over, and cook for another 5 minutes until crispy and golden.
  5. Add the Toppings:
    • Remove the potato skins from the air fryer and fill each one with shredded cheddar cheese, evenly distributing it.
    • Top with 2–3 mini pepperoni slices per skin.
  6. Melt the Cheese:
    • Return the loaded potato skins to the air fryer, cut-side up.
    • Cook at 375°F (190°C) for 3–5 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve:
    • Transfer the potato skins to a serving platter.
    • Add a dollop of sour cream to each skin and sprinkle with chopped green onions.
    • Serve immediately while hot and gooey.
