Creamy Garlic Salmon & Sundried Tomato Basil
An easy one-pan comfort food meal brimming with with crispy salmon and a velvety garlic-parmesan sauce that will give you all the cozy winter vibes! Originally posted by @healthyminutemeals
Servings: 4 servings
Ingredients:
Original recipe (1X) yields 4 servings.
Salmon
- 4 fillets salmon
- 2 tsp olive oil
- 2 tbsp butter
- 4 cloves garlic
- 1 small yellow onion (chopped)
- 1/3 cup white wine
- 1/3 cup jarred sun dried tomato (chopped)
- 1.5 cup unsweetened almond milk, creamer, OR half and half
- 3 cups baby spinach
- 1/2 cup parmesan
- 1 tbsp fresh basil (chopped)
Directions:
1) Heat oil in large skillet and sear salmon, flesh side down first, for 5 min per side. Remove from pan.
2) Add butter and garlic to pan and fry about one minute. Add onion and cook several minutes. Add wine and allow to reduce down a bit. Add sun dried tomatoes and cook several more minutes.
3) Reduce heat to low and add half and half. Bring to gentle simmer, stirring constantly. Season with salt and pepper.
4) Add the spinach and allow them to wilt in the sauce. Add Parmesan and simmer another minute.
5) Add salmon back into pan and top with basil.
