Accordion Potatoes

Ingredients
2 large russet or Idaho potatoes
1 tablespoon cornstarch
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon paprika
½ teaspoon black pepper
½ teaspoon garlic powder
Instructions
- Preheat: Preheat your air fryer to 400°F (200°C). While it’s heating up, peel the potatoes and cut them into thick slices (about 1/4 inch). Using a sharp knife, carefully score each slice in a criss-cross pattern, making sure not to cut all the way through.
- Soak & Coat: Soak the potato slices in cold water for 10 minutes to remove excess starch, then pat them dry with a towel. Toss them with cornstarch until lightly coated, then drizzle with olive oil, and season with salt, paprika, pepper, and garlic powder.
- Air Fry: Place the potatoes in the air fryer basket in a single layer and cook for 20–25 minutes, flipping halfway through. Air fry until golden and crispy on the outside, with tender insides. Serve with your favorite dip and enjoy the crunch!
