Air Fryer Chicken Parmesan
It’s 2024. Having decent air fryer meals is a must and who doesn’t love chicken parmesan? 😉
An air fryer can create crispy meals without oil and faster than your oven. Imagine a delicious plate of chicken parm without having to wait ages for your oven to heat and then to cook to crispy perfection.
This recipe will give you a quick meal that you can make after work without spending your entire evening chained to the kitchen.
Ingredients
Chicken
2 (8oz) Boneless, Skinless Chicken Breasts
Salt
Black Pepper
1/3 cup All Purpose Flour
2 large eggs
1 cup Panko Bread Crumbs
1/4 Cup Finely Grated Parmesan
1 tsp Oregano
1/2 tsp Crushed Red Pepper Flakes
1/2 tsp Garlic Powder
1 cup shredded mozzarella
Marinara
3 tbsp Extra Virgin Olive Oil
1 Small Yellow Onion (finely chopped)
6 Cloves Garlic (finely chopped)
3 Large Sprigs Basil
Salt
Black Pepper

Directions
Chicken
- Butterfly chicken by cutting in half width-wise all the way through to create 4 thin pieces of chicken.
- Season both sides with salt and black pepper.
- Place flour in a shallow bowl. Add a large pinch of salt and a few grinds of black pepper.
- In another shallow bowl, beat eggs to blend.
- In a third shallow bowl, combine panko bread crumbs, parmesan, oregano, red pepper flakes, and garlic powder.
- Working one piece of chicken at a time, coat the chicken in flour, shaking off any excess.
- Dip chicken into eggs, letting excess drip off.
- Finally dip the chicken into the panko mixture, gently pressing to adhere and ensuring both sides of the chicken are well coated.
- Working in batches (as necessary), in an air fryer basket, arrange chicken in a single layer. Cook at 400°, turning once, until just cooked through. (About 5 minutes per side.)
- Top chicken with marinara and mozzarella then continue to cook at 400° until cheese is melted and golden. (About 3 minutes more.)
Marinara
- Heat oil in a medium pot over medium heat.
- Add onion and garlic. Stir to combine. Reduce heat to low. Cover and cook, stirring occasionally. (About 10 minutes.)
- Uncover and cook, stirring occasionally until onion is translucent, softened, and fragrant. (About 5 minutes more.)
- Stir in tomatoes and basil. Bring to a boil then reduce heat to medium-low and simmer, stirring occasionally until slightly thickened. (About 30 minutes.)
- Season with salt and pepper. Discard basil.
