Alfredo Mac & Cheese
Ingredients
– 1/2 cup butter
– 1 1/2 cups heavy whipping cream
– 2 teaspoons minced garlic
– 1/2 teaspoon Italian seasoning
– 1/2 teaspoon salt
– 1/4 teaspoon pepper
– 2 cups freshly grated Parmesan cheese
– 2 cups penne pasta (or as needed)
– 1 cup sharp white cheddar, grated
– 1/2 teaspoon paprika
– 1/4 teaspoon garlic powder
Instructions
1. Cook the Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
2. Prepare the Sauce
In a large skillet or saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant. Stir in the heavy whipping cream, Italian seasoning, salt, and pepper. Bring the mixture to a gentle simmer and cook for 5-7 minutes, stirring occasionally, until the sauce begins to thicken.
3. Add the Cheeses
Reduce the heat to low and gradually whisk in the grated Parmesan cheese until it melts and the sauce becomes smooth and creamy. Add the grated sharp white cheddar and continue stirring until fully melted and incorporated into the sauce.
4. Season the Sauce
Sprinkle in the paprika and garlic powder, stirring to combine. If the sauce is too thick, add a little of the reserved pasta water to reach your desired consistency.
5. Combine Pasta and Sauce
Add the cooked penne pasta to the sauce, tossing well to coat every piece with the creamy mixture.
6. Serve
Serve hot, garnished with extra Parmesan cheese, a sprinkle of paprika, and freshly cracked black pepper if desired.
