BBQ Shredded Chicken Tacos Recipe

Ingredients
For the filling:
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- ½ cup sugar-free BBQ sauce
- 1 tbsp honey
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 red onion, thinly sliced
- ½ tsp smoked paprika (optional, for extra smokiness)
- Salt and pepper to taste
For the tacos:
- 6-8 small tortillas (corn or flour, your choice)
- 1 cup shredded cheese (optional, for melty goodness)
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Char the Chicken:
- Heat 1 tbsp olive oil in a large skillet over high heat.
- Season chicken breasts with salt, pepper, and smoked paprika (if using). Add to the skillet.
- Sear the chicken for 3-4 minutes on each side until nicely charred and fully cooked (165°F internal temperature). Remove and let rest for 5 minutes.
- Shred the Chicken:
- Using two forks, shred the chicken into bite-sized pieces.
- Sauce It Up:
- Reduce the skillet heat to medium and return the shredded chicken to the pan. Add BBQ sauce and honey, stirring until the chicken is evenly coated. Cook for 2-3 minutes, then remove from the skillet and set aside.
- Sauté the Veggies:
- Heat the remaining 1 tbsp olive oil in the same skillet. Add the bell peppers and red onion. Sauté for 5-6 minutes until softened and slightly caramelized.
- Combine the Filling:
- Add the chicken back to the skillet with the veggies. Toss everything together and heat through for 2 minutes. Adjust seasoning with salt and pepper if needed.
- Fill and Toast the Tortillas:
- Heat a clean, dry skillet over medium heat.
- Spoon the chicken and veggie mixture into each tortilla. If desired, sprinkle shredded cheese on top before folding.
- Place each filled tortilla in the skillet and cook for 1-2 minutes on each side until golden brown and slightly crispy.
