4 boneless, skinless chicken thighs (about 1.5-2 lbs.)

3/4 cup low-fat plain yogurt

3/4 cup brine from a jar of dill pickles

1 1/2 cups flour

2 eggs

1 1/2 cups cornflakes, crushed

1 Tbsp. cayenne pepper (adjust to taste)

2 tsp. paprika

1 tsp. garlic powder

Salt and pepper to taste

Instructions

  1. 1. Marinate the Chicken: In a large bowl, mix the yogurt and pickle brine. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight, to let the flavors meld and tenderize the chicken.
