3 chicken breasts, cut into strips or 1.5 pounds chicken strips

3 Eggs

1 ½ tablespoons Cajun or Creole seasoning, divided

1 ½ cups flour

1 tablespoon cornstarch

1 teaspoon baking soda

2 cups seasoned cornflakes (salt, pepper)
