Ingredients
For the Burgers:
- 1 pound ground beef (80/20 blend preferred for juiciness)
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 4 slices cheddar cheese
Toppings:
- 4 slices cooked bacon
- 4 large leaves of lettuce (butter or romaine)
- 4 slices of red onion
- 4 tablespoons Thai chili sauce
- 4 tablespoons mayonnaise
For the Buns:
Instructions
- Cook the Bacon: Heat a skillet over medium heat and cook the bacon until crispy, about 6–8 minutes. Drain on a paper towel-lined plate.
- Prepare the Patties: In a bowl, mix ground beef with garlic powder, smoked paprika, salt, and black pepper. Divide into four equal portions and shape into patties slightly larger than the buns. Press a small indent into the center of each patty with your thumb.
- Cook the Burgers: Grill or cook patties in a skillet over medium-high heat for 3–4 minutes per side (medium doneness). Add a slice of cheddar cheese to each patty in the last minute of cooking, covering to melt. Rest for 5 minutes.
- Toast the Buns: Spread butter on the cut sides of the brioche buns. Toast on a skillet or grill until golden brown, about 1–2 minutes.
- Cheese-Fuse the Buns: Melt a slice of cheddar cheese in a skillet until slightly bubbly, then press the toasted side of a bun onto the cheese. Repeat with remaining buns.
- Prepare the Thai Chili Mayo: Mix Thai chili sauce and mayonnaise in a small bowl. Adjust spice levels to your preference.
- Assemble the Burgers: Spread chili mayo on the bottom bun, then layer lettuce, red onion, and the burger patty. Top with crispy bacon and finish with the cheesy top bun.
- Serve: Serve immediately with your favorite sides. Enjoy the compliments!
Tips
- Brush patties with Thai chili sauce during the last minute of cooking for extra flavor.
- Keep an eye on brioche buns—they toast quickly!
- Add jalapeños or pickled onions for a spicier kick.
