
Vodka Baked Chicken Parm Sandwhich
Ingredients:
- 2 Chicken Breast (Halfed, and pounded out to 1/2 inch thick. You can also just use chicken cutlets and pound them out. )
- 2 Eggs (Beaten)
- 1 Cup Panko Bread Crumbs
- 1/2 Cup Parmesan Cheese
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1 Tsp Italian Seasoning
- Olive Oil Spray
- Mozzarella Cheese (If youu2019re using fresh mozzarella cheese make sure you pat it dry. Get the moisture out. )
- Pesto
- Salt and Pepper to taste
- 2 Ciabatta Buns
- Fresh Basil (Optional)
Creamy Vodka Sauce
- 1 Jar Ya Momma Vodka Sauce
- 1/2 Cup Heavy Cream
- 1/2 Tsp Chopped Calabrian Chili Paste
1. Make the crispy chicken:
Preheat oven to 425°F. Set up your breading station with beaten eggs in one bowl, and panko, Parmesan, garlic powder, onion powder, and seasoning in another.
Dip seasoned chicken in the egg, then coat in the panko mixture, pressing it in.
Place on a baking sheet (ideally with a rack), spray or drizzle with olive oil, and bake for 20 to 25 minutes, flipping halfway.
In the last few minutes, top with mozzarella and broil until bubbly.
2. Jazz up the vodka sauce:
Pour Ya Mama Vodka Sauce into a saucepan over medium heat. Stir in heavy cream and Calabrian chili paste. Simmer until warmed through and slightly thickened.
3. Assemble the sandwich:
Spread pesto on the bottom half of your toasted bun. Add crispy mozzarella chicken, spoon over that zesty vodka sauce, and top with fresh basil if you’re feeling fancy. Crown it with the top bun and dig in.
