
Zesty Chopped Italian Salad

Ingredients:
- 1 Bunch Kale (Stems removed, washed thoroughly, and massaged)
- Cherry Tomatoes
- Salami
- Pepperoni
- Mini Cucumbers (I like them because they are crunchy)
- Red Onion
- Olives (I love a Olive Salad mix you can used a Kalamata Olives)
- Banana Peppers
Zesty Italian Vinaigrette
- 1/4 cup EVOO
- 2 Tbsp Red Wine Vinegar
- 1 Tbsp Lemon Juice
- 1 Tsp Dijon Mustard
- 1 Clove Garlic
- 1/2 Tsp Dried Oregano
- 1/4 Tsp Dried Basil
- 1/2 Tsp Red Pepper Flakes
- Salt and Pepper to Taste
Instructions:
1. Prep the kale:
• Rinse the kale really well—it can hold a lot of dirt between the leaves.
• Remove the tough stems, then massage the kale with a bit of olive oil or lemon juice until it softens and turns deep green. This makes it much more tender and easier to digest.
2. Chop & toss:
• Combine the kale, cherry tomatoes, cucumbers, red onion, salami, pepperoni, and olive mix in a large bowl.
3. Dress it up:
• Whisk together the vinaigrette ingredients and pour over the salad. Toss everything to coat evenly.
4. Serve immediately or let it chill for 10–15 minutes so the flavors meld.
